This dish is a must eat when you visit Brussels, Belgium. This ultimate example of comfort food is centered around stoemp, a thick, creamy, and buttery pureé of mashed potatoes mixed with mashed vegetables. Here it was made with broccoli. ⁠It’s a humble and honest food originating from farmers who wanted to use leftover vegetables in a creative way. Brussels sprouts, carrots, endives, leeks, celery, and kale are just some examples that can feature in it. Stoemp differs from its Dutch cousin stamppot usually by being a bit heavier due to the addition of egg yolk and cream. However, this is not always the case and the dishes can be sometimes made in the same way. Stoemp is often served with some sort of meat - sausages and thick bacon are common, but you can also see it with meatballs. The pairing of stoemp with sausages is a Brussels specialty, and these bratwurst-like sausages had a beautiful colour on them, with a fatty, juicy texture and amazing porky flavour. The thick bacon was salty, savoury, and fatty. ⁠For additional indulgence, a rich and smooth beer sauce made from Tripel Kanunnik was ideal.
