@itsangusnguyen: Steamed Ginger & Green Onion Fish 🐟🥢 One of my favourite ways to cook fish. It’s light, ridiculously fragrant, and the hot oil poured over the ginger and green onions at the end is one of the most satisfying parts. 😍 Ingredients * 2 white fish fillets (cod, halibut, sea bass, tilapia, etc.) * About 1 bunch green onions * 2–3 inch piece fresh ginger * Salt * 1 tbsp Shaoxing wine (plus 1 tbsp for the sauce, optional) * 3 tbsp light soy sauce * 2 tbsp water (or chicken stock) * 1 tsp sugar * 2–3 tbsp neutral oil Method 1. Pat the fish dry, then lightly season both sides with salt. Drizzle with 1 tbsp Shaoxing wine and let it sit for 10–15 minutes while you prepare the aromatics. 2. Separate the white and green parts of the green onions. 3. Cut the white stalks into roughly 2-inch pieces, then quarter them lengthwise. Spread these over the bottom of a heatproof plate along with half of the thinly sliced ginger. Place the fish on top. 4. Slice one side of each green onion leaf to open it into a flat sheet. Cut into roughly 2-inch lengths, stack them, and thinly slice into fine strips. Place them in ice water for a few minutes until they curl, then drain well. Mix with the remaining sliced ginger. 5. No steamer? Make one! Fill a large pan with about ½–¾ inch (1–2 cm) of water. Place a small bowl or shallow plate (use microwave safe ones) upside down in the centre, then set your plate of fish on top. Cover with a lid and you’ve got yourself a DIY steamer! 6. Steam the fish until it flakes easily, about 12-15 minutes depending on thickness. 7. Meanwhile, combine the light soy sauce, water, remaining 1 tbsp Shaoxing wine, and sugar in a small saucepan. Heat until steaming. 8. Carefully pour off any liquid that collected from the steamed fish. 9. Top the fish with the curled green onions and remaining ginger. Pour the hot sauce evenly over everything. 10. Heat the neutral oil until shimmering and just beginning to smoke, then carefully pour it over the ginger and green onions. That sizzling sound is exactly what you’re after. 🤤 Serve immediately with a big bowl of steamed rice, and enjoy! #steamedfish #cookingtechniques #cookingtips #fishrecipe #asianrecipe
