Sauté aromatics Add butter (if using), onion, and garlic. Cook 3–4 minutes until soft and fragrant. 3. Make the roux Sprinkle in flour and stir constantly for 1–2 minutes to cook off the raw flour taste. 4. Build the base Slowly whisk in clam juice, water/stock, and milk. Add potatoes, bay leaf, and thyme. 5. Simmer Bring to a gentle simmer and cook 12–15 minutes, until potatoes are tender. 6. Finish with cream & clams Stir in heavy cream and chopped clams. Simmer gently for 3–5 minutes (don’t boil). 7. Season & serve Remove bay leaf. Season with salt, pepper, and optional Worcestershire/hot sauce.
