@addibrielle: ground beef sweet potato meal prep with elote inspired dip ⭐️ this one is a fav in out household. all i have to do is heat up the beef and sweet potato, top with the elote inspired dip, avocado and a few tortilla chips for crunch. per bowl: 535 calories 40g protein 43g carbs 25g fat 10g fibre meal prep ingredients (5 servings) ground beef * heat a large pan over medium-high heat and press the ground beef into the pan so it browns really well * season with taco seasoning * flip once browned and cook through * portion 130g cooked beef into each container sweet potatoes * 5–6 medium sweet potatoes (depending on size) * wash and scrub well, then slice in half * lightly coat with oil (or use cooking spray to lower calories) * season with salt * place cut side down on a baking sheet * bake at 375°f for about 45 minutes, or until the bottoms are deeply caramelized corn elote cottage cheese * 750g cottage cheese (1 bucket) * 330g corn * 25g cilantro, finely chopped * 10g fresh lime juice * tajín, to taste * blend the cottage cheese until smooth, then stir in the corn, cilantro, lime juice and top with tajín to build each bowl * 130g cooked lean ground beef * 125g baked sweet potato * 135g corn elote cottage cheese * 50g avocado * a few tortilla chips, crushed on top meal prep tip: keep the avocado and tortilla chips separate until you’re ready to eat so everything stays fresh and crispy.
