Essentially you need to focus on two things, your skills and your own confidence in strange situations. First step is to understand what you're nervous about and work on those. If you're nervous about your knives, work on your knife skills in your free time. It's going to sound weird but build that relationship with them. They are an extension of your body but it takes time and practice to feel that. If it's flipping food or stirring a sauce without a spatula, put some rice or cereal in a pan and practice the motion. Also, putting your self in low stakes situations that make you uncomfortable is another great way to address this. Like just saying hello to someone you don't normally or small things like that. Also, remember we all learn something for the first time. You're going to make mistakes. It's expected. Be kind to yourself and judge yourself off of where you were yesterday. This is a trade which means part of the learning is just the hours spent practicing over and over again. If you're practicing at home, that's less days you have to wait to feel confident in what you can do.
