please try lowering it by 15⁰ to show how it doesnt have to be dark brown. I do 425⁰ for 30 and 400⁰ for 15-20 and its crispy but no where over done

Hi Emily!! I’ve been making sourdough for a few months now. Lately I’ve been noticing that my loaves have an underproofed smell lol idk if you know what I mean. My loaves come out great but the smell isn’t what it used to be. My starter always smells more acidic like pickles a bit lol. I’ve taken good care of it but I let it starve in the fridge one time. I also feed it with more flour than water like a stiff starter. Do you think I need to do a few maintenance feedings?
