hope you did too xx (you’ll need): - 3/4 fresh peach, chopped into 1cm cubes - 150g greek yogurt - 1 egg - 2tbsp honey - 3 heaped tbsp plain flour (around 75g) - 2tsp baking powder - butter for frying (to serve): - the extra 1/4 of the peach, cubed - greek yogurt - dessicated coconut - honey method: 1. begin by slicing around the peach pip, turning the two halves and removing the pip. chop into 1cm cubes. 2. in a medium sized bowl, whisk the yogurt, egg, honey, flour and baking powder until silky smooth. 3. now add in 3/4 of the peach and stir until the peaches are well dispersed. 4. melt about 1tbsp of butter in a medium sized frying pan and scoop about 2 heaped tbsp of pancake batter into rounds on the pan. 5. make sure the heat is on medium to low as we want to cook these slowly and ensure they are not raw! 6. once golden on one side, carefully flip over and cook for another couple of minutes until both sides are golden. 7. remove from the pan and repeat these steps until you have used all of the batter. 8. serve in a stack and top with a generous dollop of greek yogurt, the rest of the peach and a sprinkle of desiccated coconut. 9. drizzle with some honey if you like… enjoy xxx 🍑 #breakfast #peaches #yogurt #pancakes
