I do like tools like this, but they confuse me in terms of practically. Do they not only work for one very specific size/spacing set? It seems a bit of a waste to get a tool that can only cut one exact hole set if you ever plan on using it for more than one job. Am I missing something, or is it just that they're meant for large scale production jobs, because I could see them being extremely useful there

Nice tool. We had something similar when we produced ventilated brake discs for Ford. To drill a hole and process the edges on the top and bottom. Special tools mean a lot, they speed up the production process.
