Recipe below! 👇 The Recipe ​Ingredients: ​1 to 1.5 lbs chicken breast, cut into bite-sized cubes ​3 large russet potatoes, peeled & shredded (6mm blade) ​3 large carrots, peeled & shredded (6mm blade) ​1 can (10.5 oz) cream of chicken soup ​1/2 cup plain Greek yogurt (or sour cream) ​1/4 cup chicken broth or water ​1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika ​Salt & black pepper to taste ​1/2 cup reduced-fat Mexican blend cheese (divided) ​Instructions: ​Preheat oven to 375°F. Spray a 9x13 dish with cooking spray. ​Whisk together the soup, Greek yogurt, broth, and seasonings in a large bowl. ​Stir in your raw cubed chicken, shredded potatoes, shredded carrots, and 1/4 cup of the Mexican cheese. ​Spread evenly into your dish.
