How does the updraft “know” how much force to exert, or how do the water droplets “know” how big they should be. (I realize that neither of these have consciousness)

(H2O)n where n is less than about 40, water is not liquid. That is at surface pressure. At cloud height it is hundred to thousands of molecules to start forming drops. Clouds are more vapour than droplet like. So your density inference about water at sea level isn’t applicable until it forms the water droplets of liquid water size. As clouds, water is less dense than the air.
