Lamb kabuli pulao کابلی پُلاؤ Ingredients • 2 cups rice (soaked for 3 hours) • 1200 g lamb meat • 100 g lamb fat • 1 onion, chopped • 1 onion, sliced • 1 tbsp ginger-garlic paste • 6–7 cloves • 3–4 bay leaves • 3–4 green cardamoms • 4–5 cinnamon sticks • 1 tbsp cumin seeds • 1 tbsp black pepper • 3 cups warm water • ½ cup yogurt • ½ tbsp garlic powder • ½ tbsp biryani masala • ½ tbsp black pepper powder • ¼ tbsp paprika powder • Juice of ½ lime • Pinch of food colour • 1 tbsp garam masala • ½ tbsp salt • 2-3 whole red chilli • 2 cups carrots, sliced • 3–4 tbsp sugar • 1 cup raisins • Oil as needed Preparation: 1. Pressure-cook lamb, lamb fat, chopped onion, ginger-garlic paste, whole spices, and water for 30 minutes after the first whistle; remove the meat and reserve the yakhni. 2. Mix yogurt, garlic powder, biryani masala, black pepper, paprika, lime juice, food colour, and yakhni; marinate the meat for 30 minutes. 3. Sauté sliced onion in yakhni oil, add yakhni, water, garam masala, and salt; bring to a boil. 4. Add soaked rice, cook until the water is absorbed, then steam (dum) on low heat for 5 minutes. 5. Cook carrots until soft, add sugar and raisins, and sauté briefly. 6. Fry the marinated meat until it releases oil. 7. Serve the rice topped with the meat and garnish with the carrots and raisins. #kabuli #pulao #rice #trending #viral
