Hi Josh! I think the slightly bitter taste you are describing in the burrito thing might be “折耳根” or Houttuynia Cordata. It’s very popular addition street food in the Chongqing/Sichuan area. It has a fishy/earthy/minty taste.

Omg maybe the bitter taste was fish mint??? When I was in Sichuan and tasted something slightly off it would alwaysssss be that. Definitely an acquired taste
