Bacon cheeseburger meatloaf! So easy and delicious:) Here’s how I made mine: Start by adding 1 pound of ground beef to a large bowl. Season it well, then add minced garlic, a splash of Worcestershire sauce, chopped onion, 1 egg, about ½ cup of breadcrumbs, a handful of shredded Colby Jack cheese, and chopped cooked bacon. Mix everything together just until combined, being careful not to overwork the meat. Overmixing can make your meatloaf tough. Transfer the mixture to an oven safe baking dish and shape it into a loaf. Bake at 350°F for 35 to 40 minutes, or until the meatloaf is cooked through. I don’t cover mine while it bakes. Once it’s finished baking, carefully remove the meatloaf from the oven and drain any excess grease from the dish. For the glaze, combine ketchup, barbecue sauce, mustard, Worcestershire sauce, and your favorite seasonings. I never measure this part. Just taste and adjust until it’s exactly how you like it. Spread the glaze generously over the meatloaf, then top with more shredded Colby Jack cheese and crumbled bacon. Return it to the 350°F oven and bake for a few more minutes, just until the cheese is melted and bubbly. Let the meatloaf rest for 5 to 10 minutes before slicing. This helps it hold together and keeps it juicy.
