Stir in the diced tomatoes, beef broth, water, Worcestershire sauce, Italian seasoning, thyme, paprika, and bay leaves. 6. Return the beef to the pot and bring to a boil. 7. Reduce the heat, cover, and simmer for 1½ hours. 8. Add the potatoes and continue cooking for another 30–40 minutes, until the beef is fork-tender and the potatoes are soft. 9. If you prefer a thicker stew, stir in the cornstarch slurry and simmer for 2–3 minutes. 10. Remove the bay leaves, garnish with fresh parsley, and serve hot.
