Honey Harissa Beef Smashed Flatbreads  The dinner I cannot stop making lately. It’s got crispy smashed beef flatbreads topped with fries, garlic yoghurt, feta & pomegranate seeds. It’s sweet, a little bit spicy and salty 🤤 Ingredients (serves 2):  100g frozen fries (I use McCain skin on) Honey harissa beef 225g lean beef mince (5%) 1 tsp smoked paprika  ½ tsp ground cumin
2 tsp harissa paste
25g honey
Salt
Black pepper Garlic yoghurt 60g 0% Greek yoghurt 15g lighter mayo
1 tsp lemon juice
1 tsp chopped garlic  Pinch herbs 
Salt
Black pepper 1-2 tsp water to loosen if needed  Salad 80g cucumber, diced
80g cherry tomatoes, quartered
¼ red onion, finely diced
1 tsp lemon juice
Salt & pepper 2 sprigs of fresh coriander, chopped Flatbreads 2 flatbreads (I used the Deli Kitchen ones)  To finish 10g feta, crumbled
25g pomegranate seeds
¼ tsp sumac (optional)  💞Cook the fries according to the packet instructions 💞Add the beef mince to a bowl with the seasoning, 1 tsp harissa paste, half of the honey, salt and black pepper. Mix well.  💞Divide the beef mixture into 2 portions and spread evenly over the surface of each flatbread.  💞Place the flatbreads beef side down into a hot pan over medium-high heat. Cook for 3-4 minutes until the beef is browned.  💞Flip and cook the flatbread side for 1-2 minutes until lightly golden and crisp. 💞Mix the remaining harissa paste and honey together. Brush the mixture over the cooked beef while still hot. 💞Mix together all of the garlic yoghurt ingredients until smooth season 💞 Combine all the salad ingredients in a bowl  💞 Top each flatbread with fries and spoon over the chopped salad. Drizzle over the garlic yoghurt. Finish with the crumbled feta, pomegranate seeds and a sprinkle of sumac.
