We love some hard earned MOMO from scratch 🥂🤝🥟 Do you think my Nepali friends will approve?? 👀 Ingredients For the Momo Filling * 2 cups minced chicken * 2 cups minced pork * 1 onion, finely diced * 1 cup cabbage, finely diced * 4 cloves garlic, minced * 1–2 chilies, finely chopped * Green parts of 2 green onions, sliced * ½ tsp salt (or to taste) * 1½ tbsp momo masala * ½ tbsp toasted cumin powder * ½ tbsp toasted coriander powder * ½ tsp turmeric powder * 2 tbsp ghee For the Momo Sauce * 1/3 cup peanuts * ¼ cup soybeans (or roasted soybeans) * 1 tbsp sesame seeds * 1 tsp Sichuan peppercorns (timur) * ½ tsp black peppercorns * 1 tbsp oil * 1 small onion, chopped * 4 cloves garlic * 1-inch piece ginger * White parts of 2 green onions * 4 tomato, chopped * 1–2 chilies * Handful of cilantro * Salt, to taste * 1 tsp momo masala * ½ tsp cumin powder * ½ tsp coriander powder For Assembly * Momo wrappers ⸻ Instructions Make the Filling 1. In a large bowl, combine the minced chicken, minced pork, onion, cabbage, garlic, chilies, and green onion greens. 2. Place the salt, momo masala, toasted cumin powder, toasted coriander powder, and turmeric powder in the center of the mixture. 3. Heat the ghee until hot and pour it directly over the spices to create a quick tadka, releasing their flavor. 4. Mix everything thoroughly until well combined. 5. Cover and refrigerate for at least 30 minutes to allow the flavors to develop. Make the Momo Sauce 1. In a dry pan, toast the soybean, peanuts, sesame seeds, Sichuan peppercorns, and black peppercorns until fragrant in the mentioned order. Set aside. 2. Heat oil in a pan and sauté the onion, garlic, ginger, green onion whites, tomato, and chilies until softened. 3. Transfer the toasted spices and sautéed vegetables to a blender and blend until smooth. 4. Add cilantro, salt, the previously grinded toasted cumin and coriander powder and momo masala, then blend again until creamy. Adjust seasoning to taste. Assemble & Steam the Momos 1. Place a spoonful of filling in the center of each momo wrapper. 2. Fold and pleat the wrappers, sealing the edges tightly. 3. Arrange the momo in a greased steamer basket. 4. Steam for 10–12 minutes, or until the filling is fully cooked.
