Soup season is officially here🍂👩🏻‍🍳 • 8 slices bacon, chopped • 2 tbsp butter • 1 onion, diced • 3 garlic cloves, minced • 1/4 cup flour • 4 cups chicken broth • 2 1/2 lbs gold potatoes, peeled & cubed • 1 tsp salt • 1/2 tsp black pepper • 1/2 tsp smoked paprika • 2 cups heavy cream • 1 cup shredded sharp cheddar • 1/2 cup sour cream Cook bacon until crispy, then remove and leave about 2 tbsp bacon fat in the pot. Add butter and onion and cook until softened. Add garlic, then stir in flour and cook for 1 minute. Slowly whisk in chicken broth. Add potatoes, salt, pepper and smoked paprika. Simmer for 12–15 minutes, or until potatoes are tender. Lightly mash some of the potatoes to thicken the soup. Reduce heat and stir in heavy cream. Add cheddar and stir until melted, then mix in sour cream and half of the bacon. Serve topped with extra cheddar, bacon, sour cream and green onions.
