1 lb ground beef (80/20) 1/4 cup soy sauce (low-sodium preferred) 2 tbsp brown sugar 3 cloves garlic, minced 1 tbsp freshly grated ginger 1 tsp gochugaru (Korean chili flakes) 1 tsp sesame oil 2 green onions, sliced 8 small corn or flour tortillas 1 medium cucumber, thinly sliced 2 tbsp rice vinegar 1 tbsp sugar 1/2 tsp salt 1/4 tsp red pepper flakes (optional) Instructions In a medium bowl, combine ground beef, soy sauce, brown sugar, minced garlic, grated ginger, and gochugaru. Mix until well combined but do not overwork the meat. (5 minutes) Spread the beef mixture evenly in the slow cooker insert. Drizzle sesame oil over the top. Cover with the lid. (1 minute) Cook on low for 4 to 5 hours, stirring about halfway through if possible, until beef is tender and flavorful. While beef cooks, thinly slice cucumber and place in a bowl. Add rice vinegar, sugar, salt, and optional red pepper flakes. Toss to coat and let sit for at least 10 minutes. Just before serving, warm tortillas in a dry skillet over medium heat for about 30 seconds per side or wrap in foil and heat in a 350°F oven for 5-7 minutes. Stir sliced green onions into the slow cooker beef. Taste and adjust seasoning if needed. Assemble tacos by spooning beef onto warm tortillas and topping with quick pickled cucumber slices.
