Boxing Day Smash Stuffing Tacos If you've got Christmas dinner leftovers and a packet of stuffing mix in the cupboard this is honestly going to be the best thing you eat on Boxing Day!  Sage & Onion Stuffing in crispy Tacos, topped with my creamy cabbage and leek, some roast chicken (or Turkey) and a good glug of gravy! Just have them with chips if you're tired of making roasties and serve them with a bowl of gravy for dunking! I've written up the recipe for the tacos below and I've also added my creamy cabbage and leek, in case you forgot to save it last time...because that one NEEDS to be on the menu! A x Makes 8 Tacos Large roast chicken 170g Sage & Onion Stuffing Mix 500ml boiling water 8 mini tortilla wraps Chicken Gravy For the cabbage and leek: 40g butter 2 Sainsbury's leeks finely sliced 6 savoy cabbage leaves, tough stem removed and finely sliced 1 tbsp plain flour 200ml chicken stock 1 tsp Sainsbury’s dijon mustard 120ml single cream Salt and ground black pepper Pre-heat the oven and cook your roast chicken according to packet instructions. Make the cabbage & leeks (recipe in the comments) Place the stuffing mix into a bowl and stir in the boiling water. Leave to rest for 10 minutes. Carve the chicken and make up the chicken gravy. Heat a good glug of oil in a non-stick pan. Use the back of a spoon to spread a thin layer of stuffing on the tortillas, right up to the edges. Place the taco, stuffing side down in the hot oil and fry on a medium heat for around 4 minutes on a medium heat, pressing the top down regularly with a spatula, to help it crisp up. Flip it over and fry the other side for a couple of minutes. Top with creamy cabbage and ledk, roast chicken and a drizzle of gravy. Fold it in half and serve!
