Loaded Purple Sweet Potatoes – Recipe Below – this is my new fav sweet potatoes dinner, inspired by Blue Zone on Netflx. I finally got the purple sweet potatoes and they are lush – you can get them from M & S or online at Ocado. I loaded mine up with herby yogurt, crispy chickpeas and pickled onions. Delish and MEGA healthy. Enjoy x JGS 
 
 Serves 2 
 
 For the potatoes 
 2 purple sweet potatoes 
 1 tbsp olive oil 
 A knob of butter 
 Chilli sauce to serve 
 Pickled onions to serve 
 Salt and pepper 
 
 For the chickpeas
 1 x 400g tin chickpeas, drain, rinsed and dried
 2 tbsp olive oil 
 2 tsp Cajun seasoning 
 1 tsp garlic powder
 1 tsp smoked paprika 
 
 For the herby yogurt 
 2 handfuls of finely chopped soft herbs leaves – I used a mix of dill, mint and parsley 
 The juice of ½ a lemon 
 1 clove garlic, grated
 ¼ green chilli, grated 
 300g yogurt 
 
 
 1.	Preheat the oven to 200c fan. Rub the oil all over the sweet potatoes and season with salt. Pop into a roasting tin and roast for 45 mins – 1 hour or until tender. 
 2.	Meanwhile, pop the chickpeas onto a baking sheet. Add the oil, spices, and plenty of salt. Toss together and cover very loosely with tin foil - this stops any exploding in the oven. Roast with the potatoes for 30-35 minutes or until crispy. 
 3.	Mix everything for the yogurt together in a mixing bowl with a good pinch of salt. 
 4.	Slice open the purple sweet potatoes. Add the butter and season the inside with salt and pepper. Top with the yogurt, crispy chickpeas and pickled onions. Serve immediately with as much chilli sauce as you like.
