FRIED DOUGH BALLS/ AMAGWINYA Ingredients 1 cup warm milk 3 teaspoons yeast 1/4 cup sugar 2 eggs 3/4 cup sugar 1 cup warm water 6 cups cake flour or all-purpose flour 2 tablespoons softened butter or margarine 1 teaspoon salt Oil for frying Method In a bowl, combine the milk, yeast, and 1/4 cup sugar. Allow it to bloom for 5–10 minutes until foamy. Add the eggs, 3/4 cup sugar, and warm water. Mix well. Gradually add the flour and knead lightly for 1–2 minutes. Add the softened butter or margarine together with the salt, then continue kneading for about 15 minutes until the dough becomes smooth and elastic. Cover the dough and allow it to rise for 1 hour 30 minutes or until doubled in size. Divide the dough into small portions and roll into balls. Place them onto a lightly floured tray, cover, and let them rise again for 30 minutes. Heat oil in a deep frying pan over medium heat. Fry the dough balls/ amagwinya on both sides until golden brown and fully cooked through.
