Ingredients
2 cups water
3 tbsp dried butterfly pea flowers
3 tbsp powdered gelatin
¼ cup sugar
1 tbsp lemon juice (for color-changing effect)
Instructions
Steep dried butterfly pea flowers in hot water for 10 min, then strain to remove the flowers.
Warm the strained blue liquid with sugar in a saucepan until sugar dissolves.
Whisk in gelatin until fully dissolved.
Pour into a shallow tray, drizzling a little lemon juice in streaks for a color-changing effect.
Chill in the fridge for at least 2–3 hours, until fully set.
Turn out onto a board, slice into cubes, and serve.
