I made it a few days ago, and we had it today.โ€จThe kids couldnโ€™t handle the spicy bibimbap, so I made young radish noodles with cold noodle broth insteadโ€”and they loved it! It looks like a lot of work, but once you get started, itโ€™s actually pretty quick.โ€จI highly recommend making this refreshing summer kimchi! ๐Ÿ’š ๐Ÿ“ Recipe 1. Trim the ends of the young radish and baby napa cabbage. Scrape and clean the radish roots with a knife. 2. Cut everything into finger-length pieces and gently rinse 2-3times. 3. Soak them in salt water for 1 hour. 4. Meanwhile, make a flour paste by stirring 500 ml water + 3 Tbsp flour over low heat until thickened. Let it cool. 5. In a blender, combine: 12 red chili peppers, ยฝ cup Korean red pepper flakes, 15 cloves garlic, 1 Tbsp ginger powder, 1 small apple, 2 onions, 4 Tbsp plum extract, 8 Tbsp fish sauce, 3 Tbsp salted shrimp, 500 ml pear juice Blend until smooth. (You can use it as is, but I like to strain it once for a smoother texture.) 6. Mix the red seasoning with the cooled flour paste. Lightly rinse the salted vegetables, drain well, then gently mix everything together.
