@foodiestablenz: This is the World's First ever Samoan Restaurant to be in the Michelin Guide located right here in NZ. Tala’s menu celebrates Samoan culture, traditions, and hospitality through innovative dishes. I tried the Fāgogo Journey menu. I had the Panikeke with literally the best palusami I have ever had. "Sua I'a" means fish soup in Samoan, Tala makes the broth from kingfish bones that are hung up for a week so it's extra smoky and umami packed. Chef Henry's take on the Samoan Roadside Bbq was a standout dish, charred on the fireplace, with fermented honey glaze and Sichuan rubs, so the flavors are intense but beautiful. Copra refers to dried coconut meat used to produce coconut oil. For many Samoans, the smoky smell of copra drying is deeply nostalgic. Tala recreated the aroma of coconut processing through smoke, caramelisation and different coconut textures in the dessert. 📍Tala 235 Parnell Road, Parnell, Auckland
