@reshgala__: Too many people make the mistake of waiting till the end of summer to harvest & preserve herbs. Please pick them right now, when they are at their peak freshness, free of pests and diseases. It also encourages the plant to put out more new growth, creating a lush and bushy plant for you. My favs are rosemary, oregano, sage and thyme (they are also the easiest to grow and need barely any watering). I wish you could smell the intense fragrance of my herbs right now. I used to wait till the end of summer as well to harvest. But I learn through trial and error and started harvesting much sooner and still had plenty of room to grow more
