クリーミーきのこ味噌うどん • Creamy Mushroom Miso Udon w/ Soft Boiled Egg   You definitely have to adjust to taste for this one. 🤡🤓   材料 • Ingredients (Please adjust to your liking!) • ½ cup Bella Mushrooms • ½ cup Shimeji Mushrooms • 1 full tsp Miso Paste (adjust to taste) • 100ml Cream • 1 tablespoon Mirin • 1 Shallot, finely chopped • 4 cloves Garlic, minced • 2 Spring Onions, thinly sliced • Small slab of Butter • 200g Udon Noodles • Sesame Seeds • 1 Egg • 100 ml water to adjust saltiness    Instructions: Bring a pot of water to a boil. • Gently lower the egg(s) into the boiling water and cook for 6 minutes. • Remove the egg(s) and place in an ice bath to cool. Once cooled, peel and set aside. Cook the Udon Noodles: • Cook the udon noodles according to package instructions. Mushroom Miso Sauce: 1. Heat a little oil in a large pan over medium heat. 2. Add the finely chopped shallot and minced garlic. 3. Sauté for about 3 minutes, or until the shallot is translucent and fragrant. Cook the Mushrooms: 1. Add the sliced mushrooms to the pan. 2. Sauté for about 3-5 minutes, or until the mushrooms are softened and lightly browned. Add Soy Sauce, Mirin, Cream, Miso Paste, and Water: 1. Stir in 1 tbsp of mirin, 100ml of cream, and 1 tsp miso paste. (Add water to adjust the saltiness) 2. Bring the mixture to a simmer and cook for 3-5 minutes, or until the sauce has thickened slightly. Combine the cooked udon noodles with the sauce, top with the soft-boiled egg, and garnish as desired.
