Red Thai Curry Chicken Skewers If you’re looking for your new favourite summer dinner… you’ve just found it 🤭 Red Thai curry marinated chicken skewers with jasmine rice, crunchy salad and the dreamiest creamy coconut red Thai sauce 🤤 So easy to make and perfect for when you need a quick & absolutely banging dinner 🤌🏼 Ingredients (serves 2):  Chicken Skewers 300g boneless, skinless chicken thighs, diced into large chunks
50g 0% Greek style yoghurt
30g red Thai curry paste
1 tsp garlic purée
1 tsp ginger purée
Juice of ½ lime Red Thai Sauce 30g red Thai curry paste
100ml light coconut milk
1 tsp light soy sauce
½ tsp honey
½ tsp fish sauce
Juice of ½ lime To Serve 1 x 250g pouch microwave jasmine rice  ½ cucumber, diced 1 medium carrot, julienned or ribboned
Juice of ½ lime
Pinch of salt
2-3 sprigs fresh coriander, chopped 💞In a bowl combine all of the skewer ingredients.  Cover and marinate for at least 30 minutes, or overnight, then thread onto skewers. 💞Air fry at 200°C for 12-14 minutes, turning halfway through, until lightly charred and cooked through. 💞Toss the carrot with the lime juice and a pinch of salt. Set aside while the chicken cooks. 💞Heat the jasmine rice according to the packet instructions. 💞Add the red Thai curry paste to a small saucepan over a medium heat and cook for 1 minute. Add the honey, light soy & fish sauce and for a further 30 seconds before stirring in the coconut milk. Simmer until smooth and slightly thickened, then remove from the heat and stir through the lime juice. 💞Divide the rice between two bowls. Arrange the cucumber and carrot alongside the rice before laying the skewers over the top. 💞Drizzle over the red thai sauce and finish with the chopped coriander and an extra squeeze of fresh lime.
