Pinch of chilli flakes  2 slices of Mexican cheese halved  2 brioche buns  2 tsp crispy onions 
Chipotle mayo:  40g lighter mayo  ½ tsp chipotle paste  1 tsp distilled vinegar  Pinch of salt  💕Mix together the honey, hot sauce and chilli flakes. Set to one side. 💕Make the chipotle mayo by combining the mayo, chipotle paste, vinegar and a pinch of salt. Pop it in the fridge while you cook the burgers. 💕Pat the beef dry before splitting into 4 small balls. Heat a large non-stick frying pan over high heat and let it get hot. 💕Once hot, place the balls straight into the pan, cover each with a small piece of baking paper, and smash them down firmly with a spatula to flatten into thin patties.
 💕Season generously with salt and pepper while they cook. Cook for 2-3 minutes until golden and crisp underneath, then flip.
 💕Brush each patty with a little of the hot honey glaze, then top with ½ slice of cheese.
 💕Let the cheese melt while the underside cooks for another 1-2 minutes. 
💕Lightly toast the brioche buns.
  💕Spread the chipotle mayo on the bottom half, then layer up two cheesy patties per burger.
