Sri Lankan Pineapple Dosi (Annasi Dosi) Dosi means candied fruit preserved in a sugary syrup. Pineapple dosi, also known as annasi dosi, is a traditional Sri Lankan sweet that Muslims and Malays make for festive functions. In Sri Lanka, dosi is made with many different fruits, but pineapple is especially popular during festivals and weddings. It is a well-known Sri Lankan sweet served at weddings and Eid celebrations. To choose the perfect pineapple for this recipe, use a slightly ripe pineapple. Look at the skin of the fruit; it should be golden yellow with a slight tinge of light green here and there. Ingredients 1 pineapple (about 900 g pineapple pieces after peeling and removing the core) 500 g sugar 4–5 cardamom pods 1 small cinnamon stick Method Peel the pineapple and remove the tough core. Cut the pineapple into large, bite-sized chunks (about 1½-inch pieces). Don’t cut the pieces too small, as they will shrink while cooking. Add the pineapple pieces to a pan along with the sugar, cardamom pods, and cinnamon stick. Cook over medium-high heat for 30 minutes, stirring every 10 minutes. Reduce the heat to low and continue cooking for another 30–45 minutes, stirring occasionally, until the syrup thickens and turns a golden brown. Turn off the heat, cover the pan, and let it cool completely. As it cools, the syrup will become thicker and develop a rich golden amber colour. Store in a clean, airtight glass jar and enjoy your homemade Sri Lankan Pineapple Dosi. #pineappledosi #annasidosi #srilankanfood #cooking #food
