Here's to Fall! 🍁 I know your weekend is full of people who care and love you because I care and love you. Ingredients 9 tbsp (126g) salted butter, softened (just 1 tbsp more than before) ½ cup packed brown sugar ¼ cup granulated sugar 1 large egg, room temperature ¾ tsp vanilla extract 1 cup old-fashioned rolled oats (plus a little extra for rolling, optional) ½ cup all-purpose flour 2 tbsp raisins ¼ cup chopped pecans ⅛ tsp baking soda (a pinch) ⅛ tsp ground cinnamon (a pinch) Tiny pinch ground nutmeg (about 1/32 tsp) Instructions Place an empty baking sheet in the freezer while you make the dough. In a medium bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes). Add egg and vanilla Beat in the egg until smooth, then stir in vanilla. In a small bowl, whisk flour, baking soda, cinnamon, and nutmeg. Stir the dry mixture into the wet until just combined — do not overmix. Add oats, raisins, and pecans Fold in oats, raisins, and pecans until evenly distributed. Cover and refrigerate dough for 1 hour (or overnight) for best thickness. Shape Scoop into 16 tall, rounded mounds. Place 2 inches apart on the cold baking sheet. Do not smoosh. Bake (Regular bake, not convection) Bake at 375°F for 12–14 minutes, checking at 10 minutes for doneness. Look for lightly golden edges and set (but still soft) centers. Let rest on baking sheet for 2–3 minutes before transferring to a wire rack
