Homemade High-Protein Pita Bread 🫓 Once you make homemade pita, you realize how simple it actually is. The Greek yogurt adds protein and makes these soft. Make them plain or stuff them with feta, both are SO good. Ingredients: • 1 packet active dry yeast (2¼ tsp) • ½ tbsp sugar (to speed up yeast activation)   • ¼ cup slightly warm water • 1½ cups Greek yogurt (0% or 2%) • 3 cups all-purpose flour, plus more for dusting • 1½ tsp sea salt • Optional: feta or your favorite cheese for stuffing Here’s how I make them: Mix the yeast, sugar and warm water and let it sit for 5–10 minutes until it gets bubbly. If it doesn’t bubble, don’t use it, your yeast may be expired. Add the Greek yogurt and flour and mix with a dough hook or your hands. Add the salt and continue mixing until a dough forms. It will be slightly sticky, that’s okay! If your dough seems to be too sticky because of the consistency of your yogurt, add more flour, I recommend adding 1 tablespoon of flour at a time.  Place the dough in a lightly floured bowl, cover and let rise for about 1½–2 hours. Work the risen dough into a large ball, divide into smaller balls and place them on a floured surface. Cover and let rest for another 30 minutes. Now you have two options: roll them straight out into thin rounds OR add some feta, close it back up and gently roll it out.  Preheat your oven to 500°F with a completely dry sheet pan inside, no oil, no parchment. Place the pita on the hot pan and bake for about 3 minutes, rotate the pan and bake another 1–2 minutes. Keep your eye on them! They’ll start bubbling and puffing, and every oven is different. As they come out, stack them and keep them covered with a clean kitchen towel. This keeps them soft. And my favorite part? They freeze beautifully. Freeze the extras and pull them out as you need them. Save this one,  homemade pita is easier than you think.  SKM Tip: Don’t open the oven door while you’re baking to check on your food. Every time you open the door, the temperature drops.
