@reidquiggins: Gordon Ramsay's "world's best brownies" Recipe below from Gordon Ramsay Restaurants Baking dish @STAUB USA Bowl @thymeandtablehome 245g dark chocolate, chopped/chips to melt faster 200g butter, cut into small cubes 175 caster sugar (cane sugar pulsed in a blender to get a finer texture) 125g light brown sugar 4 large eggs 2 tsp vanilla extract @McCormick Spices 115g AP flour Pinch of salt 100g dark chocolate chunks/chips for tossing into brownies Preheat oven to 350F. Melt chocolate and butter in a bowl over gently simmering water until combined. Whisk in sugars to cool mixture down before adding in eggs and vanilla. Sift in flour and salt and stir until combined. Pour into baking dish greased with butter and parchment in the bottom. (12x9 inches) Bake 35-50 minutes until cracked around the edges and soft in the middle. Chuck in the chocolate chunks 20 minutes in. Cool slightly before serving with whipped cream! - Reid

Melting chocolate (and I also add cocoa when making brownie) in butter basically strengths the smell and flavor. Like for example when you're making some meat you put butter on pan and saute garlic on it, the garlic scent just becomes better and essentially adds good flavour to the meat. I prefer using butter over oil cuz it's healthier and like I said, adds better smell and flavor

so basically, direct heat scorches the chocolate and splits the butter because burners get way too hot. A double boiler uses steam instead, which caps the temperature at 100°C and transfers heat evenly so everything melts perfectly without seizing.

If you melt the chocolate over direct heat, you will scorch it and it will separate. The double boiler Control controls the temperature and ensures, gentle, smooth, melting.

Professional baker here, by putting the mixture into a double boiler you allow the chocolate chips and butter combine since the ingredients with chocolate may interfere with the goeyness in the final product so by putting it into a double boiler you allow the butter to integrate itself properly into the chocolate and I lied so don’t believe everything u read.

Simple version of why: chocolate burns easily so you put the bowl ovet the pan so the chocolate doesn't burn.
