High Protein Cheese and Bacon Rolls
Makes: 4 rolls
Protein: 18g per roll
Ingredients
250g (1 cup) cottage cheese
130g (1 cup) self-raising flour
75g light tasty cheese, grated
60g bacon, diced (recipe shown uses ham, but you can substitute bacon)
Pinch of salt
Olive oil spray (optional)
Method
Blend the cottage cheese in a food processor or blender until smooth.
Add the blended cottage cheese to a bowl with the self-raising flour and a pinch of salt. Mix until just combined (the dough will be loose).
Fold through the diced bacon. Do not overmix.
Divide the dough into 4 equal portions and roll into balls. Place onto a lined baking tray.
Press each roll down slightly and sprinkle with the grated cheese. Optionally, lightly spray with olive oil.
Bake at 180°C for 25 minutes, or until golden.

Tip: The original recipe uses ham, but bacon works just as well. For the best flavour, cook the bacon first, let it cool slightly, then fold it into the dough before shaping the rolls. This also prevents excess moisture from making the dough too wet.
