It didn’t matter how careful I was with my words and tone, if I tried to explain ANYTHING, he would say, ‘I’m not stupid’. He is but I would never have told him that. I don’t care how I’m perceived. I used to but I trust myself now and I know I never have ill-intent so I don’t care what anyone thinks. It took a long time to get here but it is possible.

These chick’n tenders are 100% plant-based, high-protein, and ridiculously meaty. And most importantly, easy to make. As a food scientist, I’ve tested many meat alternatives,  but seitan wins every time. Made from wheat gluten and beans, steamed for that perfect bite, breaded, pan-fried, and tossed in a sweet-spicy-umami sauce. You’ll never miss chicken again. ✨ Here’s my recipe for crispy spicy seitan tenders from scratch (8 pieces) For the dough: – 250g wheat gluten – 125g white beans – 25g nutritional yeast (optional: to improve texture) – 250ml lukewarm vegetable broth (flavour it well: think miso, soy sauce, veggies) – 3 tsp spice mix of choice (e.g. 1 tsp smoked paprika, 1 tsp onion powder, ½ tsp thyme, ½ tsp oregano) For the breading: – 50g flour – 75ml water – 1 tsp onion powder – 1 tsp paprika powder – ½ tsp salt – Unsweetened cornflakes, crushed For the sauce: – 5 tbsp tomato sauce – 1 tbsp gochujang – 1 tbsp maple syrup Method: 1️⃣ Make the dough: Mash or blend the beans until fine and combine with the lukewarm broth. Mix all dry ingredients. Slowly pour in the lukewarm broth and stir and knead until just combined. 2️⃣ Shape: Tear and shape into tender-sized pieces. 3️⃣ Steam: Steam for 20 minutes until firm and bouncy. 4️⃣ Bread: Mix flour, water, and spices into a wet batter.
