I make a similar recipe but use 300ml cream and 250ml chicken stock (I can’t handle too rich a creamy sauce but I still like the flavour). It works well with diced chicken breast and the other ingredients listed in this recipe but I add spinach and sometimes red capsicum too just to up the veggie count.

Tip: a saucepan lid down over the onions in the pan will cook them in half the time.
