Pt.7 | My fall bakery menu 🍂 Recipe below👇🏼  The apples in my garden are ready to pick, so I made these soft brioche buns with apple, cheesecake, and cinnamon crumble! 🤎🍎 The perfect fall dessert 💌 🧾 Ingredients Brioche Dough * 390g plain flour  * 210ml warm milk * 11g instant yeast * 1 tsp granulated sugar (to activate yeast) * 75g granulated sugar * 1 medium egg * 1 tsp vanilla extract * 70g unsalted butter, softened * ¼ tsp salt Apple Filling * 2 medium apples, peeled and diced * 1.5 tbsp brown sugar * 1.5 tsp ground cinnamon * ½ tsp cornstarch * 60ml water Cream Cheese Filling * 200g cream cheese, softened * 2 tbsp powdered sugar * 1 tsp vanilla extract Crumble Topping * 60g cold unsalted butter, diced * 55g plain flour * 1 tbsp caster sugar * 1 tsp brown sugar * ½ tsp ground cinnamon Glaze  * 140g icing sugar  * 1½–2 tbsp milk  * ½ tsp vanilla extract  🍎 Method 1. Stir yeast and 1 tsp sugar into warm milk. Let sit 5–10 mins until foamy. 2. Add egg, vanilla, 75g sugar, and salt to yeast mixture. Mix in flour, knead until combined, then knead in softened butter until smooth and elastic (10–12 mins). Cover and proof until doubled (1–1.5 hrs). 3. Simmer apples, brown sugar, cinnamon, cornstarch, and water until thickened (8–10 mins). Cool. 4. Beat cream cheese, powdered sugar, and vanilla until smooth. Chill. 5. Rub butter into flour, sugars, and cinnamon until crumbly. Chill. 6. Divide dough into 75g balls. Flatten slightly and make a deep center indent. 7. Fill each with cream cheese, then apple mixture. Top with crumble. 8. Cover and let rise 30–45 mins until puffy. 9. Bake at 175°C (350°F) for 18–22 mins until golden.  10. Drizzle with glaze when cooled. #baking #apple #brioche #Recipe #fall
