@annie_in_sydney: ๐™ฌ๐™๐™–๐™ฉ ๐™ž๐™จ ๐™ฅ๐™จ๐™ฉ & ๐™ฌ๐™๐™ฎ ๐™ž๐™จ ๐™ž๐™ฉ ๐™ฅ๐™ค๐™ฅ๐™ช๐™ก๐™–๐™ง ๐Ÿ‘€ pst is a wood-fired pizza spot in sydney known for its long fermentation dough, premium italian ingredients, and constant hype online. itโ€™s one of those places that people book for weeks in advanceโ€ฆ but we managed to get a 6:30pm table only a week ahead, which was surprising given the buzz. they also lean heavily into โ€œelevated italianโ€ style pizzas with truffle, burrata, and high-end dairy. โธป ๐™ฌ๐™๐™–๐™ฉ ๐™ฌ๐™š ๐™ค๐™ง๐™™๐™š๐™ง๐™š๐™™ ๐Ÿฝ๏ธ ๐Ÿค ๐™จ๐™ฅ๐™š๐™˜๐™ž๐™–๐™ก ๐™—๐™ž๐™–๐™ฃ๐™˜๐™– ($55) fresh burrata, buffalo mozzarella, mascarpone, white truffle oil this was the standout. the truffle oil is really fragrant and the burrata is huge, creamy, and the highlight of the entire meal. definitely the most balanced and enjoyable pizza. ๐Ÿ… ๐™ฉ๐™–๐™ข๐™–๐™ ๐™ž ($36) smoked mozzarella, cherry tomato, pecorino romano, basil their margherita-style pizza. nice and fresh, but quite simple and a bit underwhelming. needed more tomato and cheese to feel complete. ๐ŸŒถ๏ธ ๐™™๐™ž๐™–๐™ซ๐™ค๐™ก๐™– ($39) tomato sauce, fresh mozzarella, homemade pork sausage, olives, red pepper, basil 8.5/10 good flavours, but not a traditional diavola. the pork sausage works but it doesnโ€™t really stand out compared to other pizzas on the menu. ๐Ÿณ ๐™—๐™ž๐™จ๐™ข๐™–๐™ง๐™  ($38) fresh mozzarella, mushroom, pork sausage, pecorino romano, egg hearty and rich with the egg adding nice creaminess. enjoyable, but not particularly memorable. donโ€™t remember the egg being there. ๐Ÿ„ ๐™ข๐™ช๐™จ๐™๐™ง๐™ค๐™ค๐™ข ๐™จ๐™ค๐™ช๐™ฅ (๐™›๐™ง๐™š๐™š) complimentary mushroom soup with cracked black pepper unexpected highlight. warm, deeply flavoured, and a really strong start to the meal. โธป ๐™ค๐™ซ๐™š๐™ง๐™–๐™ก๐™ก ๐™ฉ๐™๐™ค๐™ช๐™œ๐™๐™ฉ๐™จ ๐Ÿ“ the biggest surprise was how empty the restaurant felt given the online hype. the complimentary soup was a nice touch and honestly set a great tone for the meal. the pizzas are well made with a thin, wood-fired base, but the crust leaned quite salty across most dishes, possibly from the fermentation process. pricing is also on the higher side ($35โ€“$55 per pizza), and while everything was solid, nothing felt like it justified the level of hype or price point for me. overall, itโ€™s a good pizza spot in sydney, but not one iโ€™d rush back to or actively recommend over others. #pizza #sydneyfood #sydneyeats #sydneyguide #placesinsydney
