Still use my grandfathers smoke house built in the 50’s. I changed the roof and added a door that sealed properly but it’s just fine. It’s 5’x8’with just enough racks to do around 70-80 lbs of sausage at a time.

Man I would absolutely love your setup you can do salmon , sardines with sweet sugar maple wood with a touch of hickory, do you know I r actually smoked caviar sturgeon white caviar it was seriously deadly good now all my friends want some I should open a store
