This is the accounting equivalent of making every passenger pay for the whole bus. You’re allocating shared costs to one glass, while those same costs are also being recovered across every meal and drink sold. The profit you’re highlighting is misleading.

When you’re covering the cost of the bottle of wine in one glass sold… and you would get 5 glasses out of a bottle, so there’s 80% profit before costs. Costs aren’t going to whittle away most of that. Alcohol is where restaurants make most of their money. Especially people drinking multiple glasses in an hour.
