Staff cost at 35% per glass doesn’t make sense. They aren’t serving a single glass an hour. Is the staff cost still $6 a glass if a 4 glasses are served at once?

When you’re covering the cost of the bottle of wine in one glass sold… and you would get 5 glasses out of a bottle, so there’s 80% profit before costs. Costs aren’t going to whittle away most of that. Alcohol is where restaurants make most of their money. Especially people drinking multiple glasses in an hour.
