Match cookies by size and scoop or pipe the filling onto one, then sandwich with another. For the drizzle, melt chocolate chips and oil together in the microwave in 20 second bursts until smooth. Drizzle over the tops put in the fridge and let set; flip and drizzle other side and let set again before enjoying.
