قیمه بادمجان Gheymeh Bademjan Two of my favourite things in the world: gheyme and eggplants. Today I’m showing you how to make gheymeh bademjoon, a Persian eggplant and split pea stew with lamb♥️🇮🇷 Ingredients STEW: 1 kg lamb (cut into 1 inch pieces) 1 and 1/2 cups yellow split peas 3 limoo amani 1 tbsp saffron water 2 tbsp tomato paste 5 tbsp vegatable oil, divided 1 tsp turmeric 1/2 tsp ground pepper 1 tsp salt, more to taste 1/4 tsp ground cinnamon 1 small cinnamon stick Roughly 7 cups boiling water, add more if needed EGGPLANTS: 2 eggplants (depends on the size) Vegetable oil for frying Instructions Rinse yellow split peas, then soak for 20 minutes. Bring to a boil, reduce heat, cover, and simmer for 30 minutes. Stir halfway and skim foam. Sauté cooked split peas in 2 tbsp oil on medium-high heat for 10 minutes. Set aside. Soak 3 limoo amani in boiling water and set aside. Sauté onion in oil, add lamb, and brown on high heat. Lower heat, add turmeric, cinnamon, pepper, and tomato paste. Add split peas, boiling water, saffron water, salt, limoo amani, and a cinnamon stick. Stir and simmer on low heat for 2 hours. Cut eggplants thick, soak in water for 30 minutes.
