BBQ Chicken & Bacon Potato Salad Bowls  A fresh, filling high protein dinner that’s perfect for the lighter evenings 🙌🏼 BBQ chicken, crispy bacon, creamy potato salad, crunchy salad and a ranch drizzle finished with crispy onions. Easy to prep ahead and so good straight from the fridge 😮‍💨 You’ll find loads more quick & easy dinners in my cookbooks Low-cal Kitchen Bangers in my bio 💕  Ingredients (serves 2):  Potato salad base
300g potatoes, cut into bite sized chunks
30g light mayonnaise 
60g 0% Greek style yoghurt
½ tsp garlic granules 2 celery sticks finely diced  1 tsp distilled vinegar 
¼ tsp dijon mustard
A few sprigs of fresh parsley chopped 3-4 chives chopped 
Salt
Black pepper Meat: 
250g chicken breast diced 1 tsp smoked paprika 1 tsp bbq seasoning 50g BBQ sauce 50ml water  2 bacon medallions  Toppings
40g sweetcorn, drained
50g shredded lettuce  5 cherry tomatoes, quartered
20g red leicester cheese grated 
½ tsp crispy onions  Ranch style drizzle
40g 0% Greek yoghurt
15g light mayo
 ½ tsp garlic granules
 ½ tsp dried herbs 
1 tsp distilled vinegar 
 💞Add the potatoes to a pan of salted water, bring to the boil and cook for until mostly tender. Drain and allow to steam dry slightly. 💞Grill the bacon until crispy, then chop into small pieces.  💞Season the chicken with the paprika, BBQ seasoning, salt and pepper, then fry until cooked through. 💞Pour in the BBQ sauce and water, stirring well. 💞Mix together the mayo, yoghurt, garlic granules, vinegar, mustard, parsley, chives, salt and pepper. Add the warm potatoes and celery, then toss gently to coat. 💞Mix together all the ranch  ingredients with salt and pepper until smooth.  💞Divide the potato salad between bowls. Top with the BBQ chicken, bacon, then add the sweetcorn, lettuce and tomatoes. Finish with the grated cheese, crispy onions and a drizzle of the ranch sauce.
