Glazed lemon blueberry bread🫐🍋  Ignore my badly zested lemons lol  Recipe:  1 cup (200g) granulated sugar 1-2 tbsp lemon zest  1/2 cup (113g) unsalted butter, softened  3 large eggs 1/2 cup (120g) sour cream or plain Greek yogurt  2 tbsp lemon juice  2 tsp vanilla 1 cup (125g) all-purpose flour 1/2 cup (60g) cake flour  1 1/2 tsp baking powder 1/2 tsp salt 2 tbsp milk  1 1/4 cups (190g) blueberries  1 1/2 tbsp flour Glaze: 1 cup powdered sugar 2 tbsp lemon juice  1 tbsp heavy cream 1/4 tsp vanilla extract Pinch of salt  Note: if you don’t have cake flour, you can substitute with 1/2 cup flour plus 1 1/2 tsp cornstarch  Preheat your oven to 350F  In a large bowl, add the granulated sugar and lemon zest. Rub with your finger tips. Add the softened butter and mix until smooth.  Whisk in the eggs, then mix in the sour cream or yogurt. Mix the lemon juice, vanilla.  Add the flour, baking powder, and salt. Fold in with a rubber spatula until just combined. Add 1 1/2 tbsp flour to the blueberries and make sure they’re coated well before pouring into the batter. Fold in the mixture just until no more flour streaks are present.  Pour into a greased 9x5 loaf pan with parchment paper (for easy removal) bake for 50-60 min or until a toothpick inserted in the center comes out with a few moist crumbs or clean  Make the glaze by mixing the powdered sugar, lemon juice, cream, vanilla, and salt together until smooth.
