Restaurant Style Butter Chicken 🧈🍗 Butter chicken is one of those dishes you’ll find on every good Indian restaurants menu and its one of my absolute favourites. There are so many different ways to make it, I worked on for years is super easy to follow. It’s really just two steps. Marinating your chicken and making a tasty gravy. What I ❤️ is that it’s not too tomatoey, not too spicy and it’s just a lovely blend of spices with a hint of sweetness and a little kick. If you already tried it? Let me know in the comments! INGREDIENTS: - 500g chicken - 2 tbsp full fat yoghurt - 1 tsp turmeric (1/2 for marinade and 1/2 for gravy) - 2 plastic tbsp + 2 plastic tbsp Kashmiri masala (1/2 for marinade and 1/2 for gravy) - 2 tsp garam masala (1/2 for marinade and 1/2 for gravy) - 2 tsp dhania jeera powder (1/2 for marinade and 1/2 for gravy) - 1 tsp ginger garlic paste - 1 tbsp lemon juice - 2 tsp salt (1/2 for marinade and 1/2 for gravy) - 1/2 onion, diced - 1 green chilies - 1 sprig curry leaves - 30g cashews - 1 tsp tomato paste - 2.5 tomatoes peeled and roughly chopped - 30g butter + 1 tbsp to finish - 1/2 tsp sugar - 1/4 tsp garam masala (to finish with) - 125ml fresh cream (more if you like it extra creamy 🤌) - Optional: coal + melted butter for that smoky finish 🔥 METHOD: 1. Mix yoghurt, turmeric, Kashmiri masala, garam masala, dhania jeera, ginger garlic paste, lemon juice & salt coat chicken and marinate preferably for 3hrs+ (overnight is best) 2. Fry the marinated chicken on high heat so it browns and develops a nice char. 3. Sauté onion, chilies, curry leaves & cashews in oil till onions go translucent. 4. Braise the remaining spices the add tomatoes, tomato paste and a dash of water. Cook this down till soft. 5. Blend till smooth, then add butter to heated pot, transfer the blended gravy, season with salt & sugar, finish with garam masala. 6. Add in the fresh cream, add back the cooked chicken and simmer for a couple minutes. 7. Simmer, add marinated/cooked chicken, coat well 8. Rub in the kasuri methi. Cook for 2-3 minutes. 9. Smoke it with coal + melted butter for that extra flavour 🔥 10. Finish with fresh coriander. #butterchicken #easybutterchicken #butterchickenrecipe
