A traditional Portuguese dish combining salted cod, eggs, and crispy potatoes, seasoned with parsley and olives. Ingredients: - 400g salted cod (bacalhau), desalted and shredded - 3 large eggs - 2 large onions, thinly sliced - 2 medium potatoes, julienned - 100ml olive oil - Black olives for garnish - Fresh parsley, chopped - Salt and pepper to taste Instructions: 1. Soak the salted cod in water for 24-48 hours, changing the water several times to remove excess salt, then drain and shred. 2. Heat olive oil in a large frying pan over medium heat. 3. Add the sliced onions and cook until translucent, about 5 minutes. 4. Add the shredded cod to the onions and cook for another 5 minutes, stirring occasionally. 5. In a separate pan, fry the julienned potatoes until crispy and golden. Drain on paper towels. 6. Beat the eggs in a bowl, season with salt and pepper. 7. Add the fried potatoes to the cod and onion mixture, then pour in the beaten eggs, stirring gently until the eggs are just starting to set. 8. Remove from heat once the eggs are mostly cooked but still slightly runny. 9. Garnish with chopped parsley and black olives. 10.
