The weekend calls for something a bit boujee 🤌🏼 garlic parmesan chicken vodka parm burgers which are absolutely BANGIN  crispy Parmesan crumbed chicken, with a  creamy vodka sauce, melty mozzarella all in a garlic Parmesan butter bun 🤤 Ingredients (serves 2):
2 x 120g chicken breasts
1 tsp smoked paprika
1 tsp garlic granules
Salt
Black pepper 1 small egg, beaten
20g panko breadcrumbs
10g grated parmesan Vodka Sauce
2 tsp chopped garlic
1 tbsp tomato purée  25ml vodka
60g passata
30g light cream cheese 30ml hot water
Pinch chilli flakes (optional) Burger Build
40g mozzarella, grated 2 brioche buns
10g lighter butter spread
1 tsp chopped garlic 
5g grated parmesan 2 sprigs of fresh parsley chopped  💞Slice each chicken breast horizontally, gently  flattening them so they are an even thickness.  💞Season both sides with smoked paprika, garlic granules, salt and black pepper. 💞Mix the breadcrumbs with the grated parmesan. 💞Dip each chicken into the beaten egg, shaking off any excess, then press firmly into the breadcrumb mixture. 💞Air fry at 190°C for 12–14 minutes until cooked through. 💞Heat a small pan over medium heat and cook the chopped garlic until fragrant. Stir in the tomato purée and cook for another minute.   💞Add the vodka and let it bubble for 60 seconds to cook off the alcohol. Stir in the passata, cream cheese and hot water, then season with salt, black pepper and chilli flakes if using. Simmer until the sauce thickens slightly. 💞Once the chicken is cooked, spoon a couple of tablespoons of the vodka sauce over each fillet and top with the mozzarella. Return to the air fryer for a couple of minutes until the cheese has melted. 💞Melt the butter and chopped garlic in the microwave, then brush over the top brioche buns. Air fry for 2–3 minutes until lightly toasted. 💞To assemble the burgers, spoon the remaining vodka sauce onto the bottom buns. Add the cheesy crispy chicken, then top with the toasted bun lids. Brush the tops with any remaining garlic butter and finish with the parsley and grated parmesan. Calories per burger: 545 l Protein: 44g l Fat: 18g l Carbs: 43.2g  • • ______ Vodka substitute The vodka cooks off while simmering, leaving behind flavour rather than alcohol. If you prefer not to cook with alcohol, replace the vodka with 25ml chicken stock or water and ½ tsp lemon juice. 
Oven method  If you don’t have an air fryer, bake the coated chicken at 200°C (180°C fan) for 18–20 minutes until golden and cooked through.
