I do all this- plus add boiled eggs, mustard and pickle relish and make it like a potato salad and nobody knows it’s cauliflower.

I’ll bet you can make a potato salad with the same ingredients. A friend of mine uses half sour cream and half mayo in her potato salad and it’s delicious!
