Soluble fiber also forms a gel in the digestive tract, slowing the absorption of glucose from the rest of the meal. This leads to a more stable blood sugar response. Clinical data support this. Meta-analyses of randomized controlled trials show reductions in fasting insulin, fasting glucose, and HOMA IR with increased soluble fiber intake. Most people are not getting enough.
