@brb_snacking: Easy rice paper mochi hack 🥭 . . Mango season is here, and this 4-ingredient healthy mango mochi has been on heavy rotation for us. It uses rice paper for spring rolls, but it gives it that same chewiness that mochi has! 🍡 . . I grabbed a box of 12 champagne mangoes for $20 at Green Farm Market (a local Viet market), and they are perfect for this. . . Tip: I tried dicing the mango and adding honey to it, but it’s not needed at all. The mango is naturally sweet enough!! A whole, thick slice gives the best juicy bite. . . 🛒 Ingredients - Champagne mangoes (Thick slices) - Rice paper (Three Ladies brand) - Yogurt (3 tbsp Chobani vanilla protein, no sugar added) - Glutinous rice flour (For dusting) 👩‍🍳 How To 1. Sift a little rice flour onto a plate. 2. Wet a sheet of rice paper and place it inside a small bowl to hold its shape. 3. Layer a whole slice of mango and 3 tbsp of yogurt in the center. 4.
