I knew a girl who would do this but the restaurant we worked at had an old register so we hand wrote tickets. She memorized the prices and would tell them a total give them change and keep whatever the total was. Yes the drawer was short nearly every single day.

There was an employee that when anyone paid cash for something she would use a coupon she had stashed away. 15% off, they would take the money print the receipt for the person then go back in add a 15% discount and change the cash taken amount. These were over a thousand dollars even $10,000 transactions. she was a very trusted employee and did this a lot. She was eventually fired. I always say trust but verify.
